Yakimeshi, or Japanese fried rice, is a popular dish that is both simple to make and delicious. This versatile recipe allows you to incorporate various ingredients based on your preferences. Here’s how to prepare it!
Ingredients:
- 2 cups of cooked rice (preferably day-old)
- 1 cup of mixed vegetables (carrots, peas, bell peppers)
- 2 eggs
- 2 tablespoons of soy sauce
- 1 tablespoon of sesame oil
- 2 green onions, finely chopped
- Salt and pepper to taste
- Protein of choice (chicken, shrimp, or tofu, optional)
Instructions:
- Prepare the Rice: Make sure your rice is cooked and cooled, ideally left in the fridge overnight. This helps the rice grains stay separate.
- Heat the Pan: In a large skillet or wok, heat the sesame oil over medium heat.
- Cook the Eggs: Whisk the eggs in a bowl and pour them into the pan. Stir gently until they are fully cooked. Remove from the pan and set aside.
- Add Vegetables: In the same pan, add the mixed vegetables and sauté for about 3-4 minutes until they are tender.
- Add Rice: Add the chilled rice to the pan, breaking up any clumps. Stir-fry for about 5 minutes, allowing the rice to heat through.
- Combine Ingredients: Add the cooked eggs back into the pan along with the soy sauce, salt, and pepper. Stir everything together until well combined.
- Add Protein: If using, add your choice of protein and cook until heated through.
- Finish with Green Onions: Stir in the chopped green onions just before serving.
Serving Suggestions:
Serve your yakimeshi hot, garnished with extra green onions if desired. It can be enjoyed as a standalone dish or alongside your favorite Japanese dishes like teriyaki chicken or miso soup.
