How to Make Takoyaki

Takoyaki is a popular Japanese street food, known for its delicious, crispy exterior and soft interior. These ball-shaped snacks are usually filled with diced octopus, green onions, and a savory batter. Follow this easy tutorial to make your own delicious takoyaki at home!

Ingredients

  • 1 cup takoyaki flour (or all-purpose flour)
  • 2 cups dashi stock (or water)
  • 1 large egg
  • 1 cup diced cooked octopus
  • 1/4 cup chopped green onions
  • 1/4 cup tenkasu (tempura scraps)
  • 1/4 cup pickled ginger (optional)
  • Vegetable oil
  • Takoyaki sauce
  • Mayonnaise (Japanese style preferred)
  • Bonito flakes (katsuobushi, optional)
  • Seaweed flakes (ao-nori, optional)

Equipment

  • Takoyaki grill or pan
  • Whisk
  • Spatula or takoyaki pick
  • Large mixing bowl

Instructions

1. Prepare the Batter: In a large mixing bowl, combine the takoyaki flour and dashi stock. Whisk until smooth. Add the egg and mix well to combine.

2. Heat the Takoyaki Grill: Preheat your takoyaki grill or pan over medium heat. Brush each depression with a generous amount of vegetable oil to prevent sticking.

3. Pour the Batter: Pour the batter into each depression of the grill, filling them about 90% full.

4. Add Fillings: Quickly add diced octopus, green onions, tenkasu, and pickled ginger into each batter-filled depression.

5. Cook the Takoyaki: Allow them to cook for about 2-3 minutes. Once the edges start to firm up, use a spatula or takoyaki pick to turn them gently. Rotate them to ensure they cook evenly and form a round shape.

6. Finish Cooking: Continue cooking and turning until they are golden brown and crispy on the outside, usually around 5-7 minutes total.

7. Serve: Remove the takoyaki from the grill and place them on a serving plate. Drizzle with takoyaki sauce and mayonnaise. Sprinkle bonito flakes and seaweed flakes on top for extra flavor.
