Agedashi Tofu is a popular Japanese dish known for its delicate flavor and crispy texture. This tutorial will guide you through the steps to prepare this delectable dish at home.
Ingredients:
- 1 block of firm or extra-firm tofu
- 1/4 cup of potato starch or cornstarch
- Vegetable oil (for frying)
- 1 cup dashi broth (you can use instant dashi powder or homemade)
- 2 tablespoons soy sauce
- 1 tablespoon mirin
- Green onions (thinly sliced for garnish)
- Grated daikon (optional for serving)
- Bonito flakes (optional for serving)
Instructions:
Step 1: Prepare the Tofu
Begin by draining the tofu. Wrap it in paper towels and place a heavy object on top to press out the excess moisture. Let it sit for about 15-30 minutes.
Step 2: Cut and Coat the Tofu
Once the tofu is pressed, cut it into cubes (about 1-inch thick). Spread the potato starch or cornstarch on a plate and gently roll each tofu cube in the starch to coat evenly.
Step 3: Prepare the Dashi Sauce
In a small saucepan, combine the dashi broth, soy sauce, and mirin. Heat the mixture over medium heat until warm, then set aside.
Step 4: Fry the Tofu
In a frying pan, heat vegetable oil over medium-high heat (enough to cover the bottom). Once hot, carefully add the tofu cubes. Fry until golden brown and crispy on all sides, about 2-3 minutes per side. Remove the tofu and drain on paper towels.
Step 5: Serve
To serve, place the fried tofu in a bowl and pour the warm dashi sauce over it. Garnish with sliced green onions, and add grated daikon and bonito flakes if desired. Enjoy your Agedashi Tofu while it’s hot!
